These morsels of purely divine decadence will have you coming back for more! They make a perfect dessert or finger food sweet for that stand-up Cocktail Party.

Mango Crepes



Crepe Batter

Ingredients:

1.5 cup gluten free Plain Flour
2 Egg Yolks
1 Whole Egg
2 cups Milk
2 tablespoon Oil or Melted Butter
2 tablespoons Sugar
1/2 teaspoon Salt 


                                                                      Filling

Ingredients:

1.5 cup Thickened Cream
2/3 cup Sugar
1-2 cups Mango - diced


Whip the cream and sugar till thick, add diced mango and stir well!



Method:

Beat all of the crepe ingredients together until smooth.

If too thick, add extra milk.
Heat the crepe pan or non-stick pan.

Spray with a little oil spray. 
Pour a scoop of crepe batter into/onto pan. This must be only a thin layer. 
Cook only one side, leave it to cool on the rack.
Fill with mango filling and wrap. 
Refrigerate for 1-2 hours.

Tips:



  •   You can use strawberry durian... to replace the mango
  •   The amount of the sugar required in the filling may vary depending on the sugar content of the cream purchased.
  •  The crepes can be made a day ahead and placed into an airtight container.
    Simply Divine!
