This beautiful #glutenfree Pumpkin Cake gives you the perfect treat to serve at your next morning tea or to pop into the lunch box.

Ingredients:

250 gm Butter
1 cup Sugar
2 tablespoons Honey
6 Eggs
1 cup mashed Pumpkin
3 cups gluten-free SR Flour
1 teaspoon Bicarb Soda gluten-free
2 sprinkle Gound Nutmeg
1 cup Sultanas
1/2 cup chopped Walnuts
 













Method:

Preheat oven to 180 C.
Grease a 210 x 70 round cake tin or equivalent.
Mix butter, sugar and honey till smooth.
Add eggs - beat well.
Add mashed pumpkin.
Add in all other dry ingredients and mix well.
Pour into greased cake pan and cook approx 50 mins or till skewer comes out clean.
Turn out - dust with icing sugar.
