Malaysian Inspired Tropical Sweet Soup #glutenfree

Tonite we bring you a beautiful sweet soup that is lovely served warm on a Winter's night or chilled for a perfect starter on a hot Summer's day. 


Tropical Sweet Soup


Ingredients:

I cup Dried Black Eyed Beans. (Soak in water 2-3 hours)
1.5 cups Sweet Potato - cut diamond shaped (steamed till just tender)
1.5 Litre of Water
Add Strawberries and Banana
600 ml Coconut Cream
1/2 cup of Sago
1 cup sugar (to taste)
1 teaspoon Salt
2-3 leaves of Pandan if available
2 Banana cut into small pieces
1 Punnet of Strawberries

Method:

Cook Beans in soaking water until 90% soft (approx 20 mins).
Drain and wash beans in a sieve.
Put back into pot with 1.5 litres of water and the pandan leaves (if using) Until boiling.
Turn down to simmer.
Add sago and cook about 15 mins - stir several times through this process to stop sticking to bottom.
Add coconut cream, salt and sugar bring to boil again. 
Add steamed sweet potato then banana and strawberry.
Cook another 5 mins.
Remove from heat
Serve warm or cold.

Enjoy
