Banana Choc Chip Muffins #glutenfree #glutenfreebaking

We have brought you all different cakes and biscuits but, up until now, muffins have been missing from the menu. These beautiful banana choc chip muffins are great at breakfast, perfect as lunch box fillers or simply as a snack.


Ingredients for Banana Choc Chip Muffins
Ingredients:

200g Butter
180g Caster Sugar
4 Eggs
400g gluten-free Self Raising Flour
3 ripe Bananas - mashed
1 teaspoon Baking Soda
100g Chocolate Chips (or walnut)












Method:

Beat butter and sugar until soft and smooth.
Add eggs one by one while beating.
Add mashed bananas mixed with baking soda, mix through.
Add flour, mix well.
Add chocolate chip into cake mix, stir in.
Place into muffin pans lined with your favourite wrapper.
Bake in 180'c for 20 min or until skewer comes out clean
Makes 10 - 12 muffins

Tip:

My preference is to just line the muffin pans with squares of baking paper pressed into the pans - usually approx 15cm x 15cm square.
